Super Seed, Kale + White Bean Salad

Say hello to your new go-to salad! Packed with fiber, protein, and all the good stuff, our super seed, kale, and white bean salad has it all. Massaged kale and creamy white beans come together with a velvety avocado dressing. Topped with warm, roasted butternut squash and a sprinkle of super seeds, this bowl will leave you feeling full and satisfied!


INGREDIENTS

Roasted butternut squash:

  • 1 small butternut squash

  • 1 tbsp olive oil

  • Salt and pepper

Salad ingredients: 

  • 200g kale  

  • 2 tbsp extra virgin olive oil 

  • Squeeze of lemon juice  

  • 1 medium avocado (use ½ for the dressing and the other half in the salad)  

  • ½ a jar of white beans 

  • 2 tbsp pumpkin seeds 

  • 2 tbsp sunflower seeds 

  • 2 tbsp sesame seeds

Salad dressing: 

  • 2 tbsp extra virgin olive oil 

  • Squeeze of lemon juice  

  • ½ a medium avocado 

  • 1 clove of garlic, grated  

  • Salt & pepper to taste 

  • Cold water, we use around 50ml 

METHOD

Butternut squash:

  • Peel the butternut squash, cut in half and remove the seeds inside.

  • Cut into thin slices and transfer to a baking tray.

  • Drizzle with olive oil and season with salt and pepper.

  • Roast in a preheated oven for around 25 minutes, until lightly golden and cooked through.

  • Remove from oven and set aside.

Salad base:

  • Whilst the squash cooks, place the kale into a large bowl, add the olive oil, squeeze of lemon and a pinch of salt and pepper. Massage this into the kale for around 2-3 minutes, until softened.

Dressing:

  • To make the dressing, add olive oil, a squeeze of lemon, ½ an avocado, grated garlic and a splash of water to your food blender.

  • Blend until combined. If the dressing is a little thick, add a splash more water to your desired consistency. Season with salt and pepper to taste.  

Build your bowl:

  • To build your salad, place the massaged kale into your serving bowl.

  • Chop up your remaining ½ avocado and scatter on top.

  • Rinse your white beans, then scatter these on top, too. We love to use Bold Bean Co.’s organic white beans for ultimate flavour!  

  • Add the warm butternut squash slices to the bowl.

  • Pour over your creamy avocado dressing and toss everything together.

  • Top with pumpkin, sunflower and sesame seeds.
