Super green quinoa bowl + charred asparagus

Our super green quinoa bowl is packed with seasonal goodness. We’ve paired nutty quinoa, crgreen vegetables, and a creamy pesto dressing to create the ultimate bowl. Topped with lightly charred seasonal asparagus and a sprinkle of sesame seeds.
INGREDIENTS
Ingredients:
Base:
1 cup cooked quinoa
½ cup edamame
½ cup cut cucumber
½ cup pea snaps, thinly sliced
¼ cup finely chopped parsley
¼ cup thinly sliced radish
1 small avocado, sliced
Toppings:
5-6 spears charred asparagus
2 tablespoons sesame seeds (black and white mix)
Pinch of flaky sea salt
Creamy pesto dressing:
1½ cup packed basil leaves
2 garlic cloves
½ cup extra virgin olive oil
2 tablespoons pine nuts
2 tablespoons lemon juice
1 tablespoon nutritional yeast
½ teaspoon salt
¼ teaspoon black pepper
¼ cup unsweetened plant-based yogurt
METHOD
Quinoa Base:
Cook quinoa according to package instructions.
Roughly cut the cucumber, pea snaps, avocado, radish and fresh parsley.
Add everything to a large bowl.
Pesto Dressing:
In a blender or food processor, combine basil, garlic, olive oil, pine nuts, lemon juice, nutritional yeast, salt, and pepper. Blend until smooth.
Stir in plant-based yogurt
Char the Asparagus:
Heat a grill pan or skillet over medium-high heat. Brush asparagus with olive oil and season with salt.
Grill for 2-3 minutes per side until slightly charred.
Assemble the Bowl:
Pour the creamy pesto dressing over the quinoa and greens. Toss to combine.
Transfer to serving plates.
Top with charred asparagus and a sprinkle of sesame seeds.
