15 Min Parsnip + Chestnut Winter Salad

Speedy Golden parsnip + chestnut winter salad, with a balsamic dressing

This speedy winter salad is proof that cozy flavours can come together in no time! Sweet, golden parsnips, nutty chestnuts, and hearty grains are tossed in a simple balsamic dressing for a warm, satisfying dish that’s ready in just 15 minutes. Perfect for when you need something quick, seasonal, and full of flavour.


INGREDIENTS

  • 2 large parsnips

  • 1 tbsp honey or maple syrup

  • Salt and pepper, as needed

  • Small handful pre-cooked chestnuts (about 4 chestnuts)

  • ½ pouch microwavable red, white and wild rice

  • ½ bag of rocket

  • Small handful dried cranberries

  • 1 tbsp olive oil

  • ½ tbsp balsamic vinegar

  • A pinch of salt

  • A pinch of oregano

METHOD

1. Slice up your parsnips length-ways into even sized pieces and add them to the air fryer with 1 tbsp honey, a pinch of salt and pepper and a drizzle of oil. Roast for 12mins or until golden and tender.

2. While the parsnips roast, heat the grains according to the package instructions.

3. Roughly chop the chestnuts.

4. Once the parsnips are ready, combine them with the warm grains, rocket, cranberries and chestnuts in a serving bowl. Drizzle with olive oil and balsamic vinegar, sprinkle with a pinch of salt and a dash of oregano, and toss to coat evenly. Serve warm and enjoy!
