Green Superfood Salad

Broccoli, edamame + Avocado super salad paired with a citrus dressing

This green superfood salad is a vibrant mix of crunchy edamame, broccoli, creamy avocado, and a zesty dressing. Packed to the the brim with greens and fresh herbs, ready to make you feel amazing from the inside out.


INGREDIENTS

Salad:

  • 250g tenderstem broccoli

  • 100g frozen edamame

  • 250g pouch cooked quinoa

  • 100g spinach

  • Handful of coriander and mint, chopped

  • 1 ripe avocado

  • 50g pumpkin seeds

Dressing:

  • Zest and juice of 1/2 lemon

  • Zest and juice of 1/2 orange

  • 1 tbsp white wine vinegar

  • 2 tbsp Dijon mustard

  • 2 tbsp olive oil

METHOD

1. Begin by filling a pan with water and place it over a high heat. Once boiling, add the broccoli and frozen edamame. Steam them gently for 5 minutes until tender. Drain, set aside, and let them cool down.

2. Chop the broccoli into bite-sized pieces and add them to a large mixing bowl, along with the cooled edamame.

3. Prepare the quinoa according to the package instructions. Once cooked, set it aside to cool.

4. Tear or finely chop the spinach into smaller pieces and add it to the bowl with the broccoli and edamame. Chop your fresh herbs and mix them in too, along with the cooled quinoa.

5. Cut your avocado in half then slice this into small chunks.

6. Toast your pumpkin seeds by adding them to a dry pan over medium-high heat for 2-3mins, or until slightly golden and they start ‘popping’. 

7. To make the dressing, whisk together all the ingredients in a small jug until fully combined.

8. Add the avocado, pumpkin seeds and dressing to the salad and toss until well mixed.

9. Serve by itself for a light lunch or pair it with your favourite protein.
