Sweet potato, Rocket + cranberry winter salad with The best maple tahini dressing

This winter power salad is a cozy, nutrient-packed meal that’s perfect for those chilly days when you’re on the go but still want something nourishing. With roasted sweet potatoes, crisp apples, toasty pecans, and a creamy maple tahini dressing.
INGREDIENTS
Salad:
1 bag of rocket
1 sweet potato, cubed
1 tbsp olive oil
Salt, to taste
1 apple, cubed
1 can white beans
1/4 cup dried cranberries
1 cup pecans
Maple Tahini Dressing:
1/2 cup tahini
2 tbsp maple syrup
1-2 tbsp apple cider vinegar
1 tsp garlic powder
6-8 tbsp water
Salt, to taste
METHOD
1. Preheat your oven to 200°C. Line a large baking sheet with parchment paper and have a second baking sheet ready for toasting the pecans.
2. Cut the sweet potato into cubes. Toss with olive oil and a pinch of salt, then spread onto the lined baking sheet. Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are slightly browned and fork-tender.
3. While the sweet potato is roasting, spread the pecans onto the second baking sheet. Toast them in the oven for about 6 minutes, or until fragrant and slightly browned. Be careful not to burn them!
4. To prepare the salad base chop the rocket and add it to a large mixing bowl. Add the white beans, dried cranberries, and apple slices to the bowl.
5. For the Maple Tahini Dressing: In a small bowl, combine the tahini, maple syrup, apple cider vinegar, garlic powder, and salt. Gradually add water, one tablespoon at a time, whisking until the dressing reaches your desired consistency—creamy but pourable.
6. Once the sweet potatoes and pecans are ready, add them to the salad bowl along with the apple, beans, cranberries, and rocket. Toss everything together gently.
7. Drizzle the dressing over the top, and give everything a final toss.
8. Your winter salad is ready to enjoy! Perfect for a cozy lunch at home or packed for a nourishing meal on the go.
Optional: for an extra boost, top with sliced avocado and a squeeze of fresh lemon juice.
