INGREDIENTS
Salad:
1 cup mixed beans
2 cups romaine lettuce, chopped
1/2 cup cherry tomatoes, halved
1/2 cup sweetcorn
1/2 red pepper, diced
2 tbsp pumpkin seeds
2 tbsp pickled jalapeños, chopped
1/2 cup cooked mixed grains
1/4 cup crushed tortilla chips
1/2 avocado, diced
Dressing:
Juice of 1 lime
1 tbsp fresh coriander, chopped
1/2 tsp g round cumin
1/2 tsp smoked paprika (for depth of flavour)
1/2 tsp garlic powder
1 tbsp olive oil
METHOD
Prepare the Salad Base:
Start by chopping up all of your salad ingredients to similar sizes.
In a large bowl, combine the mixed beans, chopped romaine lettuce, halved cherry tomatoes, sweetcorn, diced red pepper, diced avocado, chopped pickled jalapeños and cooked mixed grains. Toss gently to mix.
Make the Dressing:
In a small bowl, whisk together the lime juice, chopped fresh coriander, ground cumin, smoked paprika, garlic powder, and olive oil until well combined.
Toss and Serve:
Drizzle the dressing over the salad and toss everything together until evenly coated.
Sprinkle the pumpkin seeds, crushed tortilla chips over the salad.
Serve immediately and enjoy!
