Smashed Chickpea, Rocket + Avo Wrap

Smashed chickpea wrap
with dill, rocket
+ avocado

INGREDIENTS

Smashed chickpeas:

  • 1 tin of chickpeas

  • ½ red onion, diced

  • 1 stick celery, diced

  • ½ tsp mustard

  • Pinch of black pepper

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ¼ cup vegan mayo (we use Dr Will’s)

  • Small handful parsley, chopped

  • Small handful dill, chopped

  • 3 tbsp capers, finely chopped

  • ½ tsp sea salt

For the wraps:

  • 2 large wraps

  • Large handful of rocket

  • Pickled red onion

  • 1 tsp zhoug paste

  • 1 tsp olive oil

  • Pinch of sea salt

  • Small handful dill

  • ½ avocado

 

METHOD

1. Drain and rinse the chickpeas and add to a large bowl. Mash them with a potato masher or fork until they’re a chunky texture.

2. Add all the other smashed chickpea ingredients and mix well.

3. Add the chickpea mix to the wrap, then top with rocket, pickled onion, sliced avocado and extra dill. Wrap and serve!
