Harissa Roasted Cauliflower Wrap with Houmous, Pomegranate + Zhoug Sauce

Harissa Roasted Cauliflower & Herby Zhoug sauce, wrapped up with houmous and pomegranate

INGREDIENTS

Harissa cauliflower:

  • 1 cauliflower

  • 3 tbsp oil

  • 3 tbsp harissa paste

  • Salt

Zhoug dressing:

  • 1 bunch of parsley

  • 1 bunch of coriander

  • 1 large green chilli

  • 1 clove of garlic

  • 1 tsp cumin

  • 1/2 tsp turmeric

  • 1tsp salt

  • 1/4 cup olive oil

  • 1/4 cup tahini

  • 1/2 lemon, juiced

For the wraps:

  • 2 large wraps

  • Houmous

  • Pomegranate

  • Rocket

  • Pickled pink onion

 

METHOD

1. Begin by chopping it up the cauliflower into small chunks

2. Mix together your oil and harissa, with a pinch of salt, then marinade your cauliflower chunks in this oil mix, and roast the cauliflower until soft. This can be done in either an oven or air fryer!

3. For the dressing combine all the ingredients (olive oil, garlic, cumin, turmeric, tahini, lemon juice, chilli, salt, parsley and coriander) into a blender, and blend up until nice and smooth

4. Layer your wrap with houmous, rocket, the roasted harissa cauliflower, pomegranate, pickled onion and lots of zhoug dressing

5. Roll it up and enjoy!
