Chivey Mushrooms On Toast

File this under: things on toast that aren’t avocado. Which is exactly why our co-founder Steph came up with this - perfect for weekend mornings (or weekday lunches) when you just need something quich, easy and delicious.


INGREDIENTS

  • 1 pack chestnut mushrooms

  • 1/2 tup dairy free cream cheese (we used Nush)

  • 1 tsp coconut oil

  • large pinch sea salt

  • 1 bunch chives

  • Sourdough (or gluten free alternative) to serve

METHOD

1. Thinly slice the mushrooms, then add them to a pan over a high heat with the oil and salt

2. Cook for 5-10minutes, adding a little water if they begin to stick. Meanwhile, thinly cut your bunch of chives

3. Remove from the heat and stir the nush and chives with the mushrooms - the heat of the pan will melt the cream cheese

4. Serve on toasted sourdough or a gluten-free alternative
