Better Baked Beans

BAKED BEANS

Serves: 6-8 portions
INGREDIENTS
2 cloves of garlic
1 tbsp olive oil
1 courgette
1 tin of tomatoes
1 veg stock cube
1 tin canellini beans
1 tsp sea salt
1 tsp smoked paprika
METHOD
1. Thinly slice your garlic and sautee in olive oil in a large saucepan (with a lid) for a few minutes until soft.
2. Dice your courgette and add this to the saucepan with the tin of tomatoes, 1 tins-worth of water and 1 stock cube. Simmer for 15 minutes with the lid on.
3. Blend the stew until smooth, either in a blender or with a hand blender. Add back to the pan, add the salt, paprika and canellini beans and simmer for a further 10 minutes.
Storage: these will keep in the fridge for 4-5 days, or freeze into individual portions.
