Creamy Parsnip Mash
Recipe:
CREAMY PARSNIP MASH
Serves 2 as a side
INGREDIENTS
- 250g parsnips
- 75ml cashew milk
- 1/2 tsp Himalayan salt
- Olive oil (to drizzle)
- A few sprigs of thyme
METHOD
1. Peel and roughly chop the parsnips. Add to a pan of salted water and simmer for around 10 minutes or until the parsnips are soft.
2. Drain the parsnips and add to a food processor or blender with the cashew milk and Himalayan salt. Blitz until silky smooth.
3. Drizzle the mash with olive oil and sprinkle over a few sprigs of thyme.
