10-Minute Probiotic Miso Butter Beans

These miso butter beans are a comforting, quick dish with tons of flavour, packed with gut-loving probiotics from the miso and kimchi. With creamy butter beans simmered in a rich miso butter and topped with fresh vegetables, this dish is the ultimate healthy comfort food!


INGREDIENTS

Beans:

  • 1 jar of butter beans (we use Bold Bean)

  • 1 shallot, finely diced

  • 2 cloves garlic, finely sliced

  • 25g butter

  • Juice of ½ lemon

  • 1 tbsp miso paste

Toppings:

  • Kimchi

  • Cooked tenderstem broccoli

  • Cooked mushrooms

  • Spring onions, sliced

  • Sesame seeds

METHOD

  1. Melt the butter in a saucepan over low heat. Add the shallots and cook for a few minutes, until softened, then stir in the garlic.

  2. Once the shallots are translucent, add the butter beans along with their bean stock. Let them bubble away for a few minutes.

  3. Add the lemon juice and miso paste, stirring to combine.

  4. Continue cooking for another couple of minutes, adding a splash of water if needed. Ensure the miso is fully melted through the beans.

  5. Once well combined, pour your miso beans into a bowl.

  6. Top with kimchi, tenderstem broccoli, mushrooms, spring onions, and a sprinkle of sesame seeds.

Optional: feel free to get creative and mix up the toppings with your fave veggies, proteins and seeds.
