Give your gut the nourishment it craves with this miso mushroom power bowl. Packed with a vibrant mix of our favourite veggies, it’s a perfectly balanced, plant-powered meal designed to fuel your body. Topped with miso-sautéed mushrooms and complemented with a tasty kick of kimchi.
INGREDIENTS
Mushrooms:
200g mushrooms (sliced)
½ spoon miso paste
1 tbsp olive oil
Veg:
Shredded purple cabbage
Cucumber (sliced)
Shredded carrot
Kimchi
Spring onion (sliced)
Edamame
1 avocado (sliced)
Rice
Dressing:
4 ½ tablespoons extra virgin olive oil
3 tablespoons rice vinegar
1 tablespoon white miso
1 ½ teaspoons maple
¾ teaspoon sesame oil
¾ teaspoon soy sauce/tamari
Toppings:
Sesame seeds
Kimchi (extra for garnish)
METHOD
Mushrooms:
Sauté the sliced mushrooms with miso paste and olive oil in a pan over medium heat.
Deglaze the pan with a splash of vinegar while cooking for extra flavour.
Rice:
Heat the rice according to the instructions on the packet.
Dressing:
In a small bowl, mix all the dressing ingredients with a fork until well combined.
Assemble:
In a bowl, layer the rice, followed by the vegetables and sautéed mushrooms. Drizzle with the dressing.
Top with sesame seeds and extra kimchi.
