Miso mushroom power bowl with gut-loving goodness

Give your gut the nourishment it craves with this miso mushroom power bowl. Packed with a vibrant mix of our favourite veggies, it’s a perfectly balanced, plant-powered meal designed to fuel your body. Topped with miso-sautéed mushrooms and complemented with a tasty kick of kimchi.


INGREDIENTS

Mushrooms: 

  • 200g mushrooms (sliced) 

  • ½ spoon miso paste 

  • 1 tbsp olive oil 

Veg: 

  • Shredded purple cabbage 

  • Cucumber (sliced) 

  • Shredded carrot 

  • Kimchi 

  • Spring onion (sliced) 

  • Edamame 

  • 1 avocado (sliced) 

  • Rice 

Dressing: 

  • 4 ½ tablespoons extra virgin olive oil 

  • 3 tablespoons rice vinegar 

  • 1 tablespoon white miso 

  • 1 ½ teaspoons maple 

  • ¾ teaspoon sesame oil 

  • ¾ teaspoon soy sauce/tamari 

Toppings: 

  • Sesame seeds 

  • Kimchi (extra for garnish) 

METHOD

Mushrooms: 

  • Sauté the sliced mushrooms with miso paste and olive oil in a pan over medium heat. 

  • Deglaze the pan with a splash of vinegar while cooking for extra flavour. 

Rice: 

  • Heat the rice according to the instructions on the packet. 

Dressing: 

  • In a small bowl, mix all the dressing ingredients with a fork until well combined. 

Assemble: 

  • In a bowl, layer the rice, followed by the vegetables and sautéed mushrooms. Drizzle with the dressing. 

  • Top with sesame seeds and extra kimchi.
